Ingredients
Serves 4 people
1 washed Cauliflower broken into florets
2 Medium potatoes, peeled and diced
1 Fresh tomato, diced
1/2 Pot of Spice Burst
1-2 Tbsp oil
1 Teaspoon of black mustard seeds
Cook Time: 20-25 minutes
Method
Add oil to the pan and heat gently.
Add mustard seeds and heat for 2-3 minutes until the seeds start to pop.
Add cauliflower and potatoes and stir
Add Spice Burst and let it coat all the cauliflower and potatoes
Add tomato and gently simmer for 5-6 minutes
Add 2 tablespoons of water. Cover and simmer until cooked. Stir occasionally.
20-25 minutes

Psst. If you have any left over rice and want to take this to the next level then:
Add 1 tablespoon of oil to the pan. Heat gently and then add a teaspoon of cumin seeds.
Mix the rice with 2 teaspoons of Spice Burst and add to pan.
Add 1 cup of peas and a cup of sweetcorn.
Mix the rice, peas and sweetcorn. Cover and heat for 10-15 minutes. Stir occasionally
